Dairy-Free Chocolate Cookies

Ingredients:



  • 1 cup coconut oil, solid (not melted)

  • 1 1/4 cups granulated sugar

  • 1/4 cup almond milk (or any other dairy-free milk)

  • 1 teaspoon vanilla extract

  • 2 cups all-purpose flour

  • 3/4 cup dairy-free cocoa powder

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 cup dairy-free chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a large mixing bowl, cream together the solid coconut oil and sugar until smooth and fluffy. Add the almond milk and vanilla extract, mixing until well combined.

  3. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until the dough comes together. Fold in the dairy-free chocolate chips.

  4. Scoop tablespoon-sized amounts of dough onto the prepared baking sheet. Flatten slightly with the back of the spoon.

  5. Bake for 10-12 minutes, or until the edges are firm but the centers are still soft.

  6. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
