Dairy-Free & Egg-Free Pancakes

Ingredients:

  • 1 cup all-purpose flour (gluten-free if necessary)

  • 1 tablespoon sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 cup almond milk (or any other dairy-free milk)

  • 2 tablespoons vegetable oil

  • 1 teaspoon vanilla extract

Instructions:

  1. In a large bowl, combine the flour, sugar, baking powder, and salt.

  2. In another bowl, whisk together the almond milk, vegetable oil, and vanilla extract.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter may be slightly lumpy, which is okay.

  4. Heat a non-stick skillet over medium heat and lightly oil it. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes. Flip and cook for another 2-3 minutes on the other side until golden brown.

  5. Serve hot with your favorite syrup, fresh fruits, or a dollop of dairy-free whipped cream.
